This, in fact, is Heidi Swanson’s Raw Tuscan Kale Salad with a few modifications to make it more of a simple, on-hand ingredients type of dish. (And much worse photo styling, sigh). It can be made just as easily with swiss chard, but do not be tempted to sub collard greens. I made that mistake once.

This is the one dish that almost everyone asks for the recipe for, and is great for making ahead and bringing places. It was also the amusing upshot of behind-the-scenes drama from a friend’s potluck bachelorette party. I was trying to get the potluckers to menu plan, since my friend is an amazing baker and so are many of her friends and I was worried that it would be a party with twelve fantabulous desserts and we’d all be too sugar saturated to drink properly. I couldn’t get people coordinated, so instead brought a double recipe of this, with quinoa. It was indeed the single green salvation in a crowd of cake plates.

1/2 clove of garlic
1/4 tsp salt
pinch of red pepper flakes
3 tbs olive oil
1/4 cup grated pecorino cheese (I usually use more)
juice of an entire lemon
1 bunch of Tuscan Kale (the flat kind) or Swiss Chard, washed & etc.
cooked quinoa, around 1/2 cup dry is the right amount. I usually dress with salt and olive oil before adding
freshly ground black pepper to taste

smash the garlic and salt together in a mortar & pestle
add the olive oil, red pepper, grated cheese and lemon juice and whisk up
add to your kale, toss, and let marinade for 5 min or so. add more salt, pepper and olive oil to taste.
add the quinoa.

    This is excellent! I just made this while going a little easier on the oil and cheese, and I only had ruffly Kale in the house…still, it’s a new fave.
